Wilton House Porter

ABV 6.2%

In Collaboration with the Wilton House we crafted this porter based on two historic recipes.  The first is a Spruce Beer recipe we found in “The Virginia House Wife” Circa 1831 by Mary Randolph. This recipe includes young Spruce Tips (harvested from the brewer’s urban garden spring 2017) Molasses, All Spice, and Ginger.  The second, pulled from George Washington’s recipe for a Molasses, Grain, and Hops based porter.  We followed these recipes as close as possible including fermenting the beer in oak casks.

Aroma: Chocolate, Molasses, Spruce, Cedar, Cinnamon, Caramel, Nutmeg, Pine

Flavor: Molasses, Chocolate, Pine Resin, Ginger, Mexican Hot Chocolate, Spruce, Oak

Tangerine IPA

ABV 7%

 

Tropical & Citrus Fruit Bomb of an IPA made with a Tangerine Puree.

Aroma: Tangerine, Yellow Nectarine, Floral, Mandarin, Candied Orange, Grapefruit, Pineapple

Flavor: Citrus Bomb, Orange Juice, Tangerine, Citrus Zest, Peach, Pineapple

 

oyster rauchbier

ABV 5.7%

German Rauchbier crafted with whole Virginia Oyster.  The salty briny umami flavor from the oysters and shells pairs perfectly with the rich malty smoked character of our Rauchbier.

ABV 6.8%

Saison crafted with Chef Bryan McClure from Lemaire with the delicious fruity tomato varieties; Orange Brandy Sun Gold, Juliet, Ground Cherry, Striped German Black Cherry, and traditional Cherry Tomatoes.

We crafted a “Vermouth” in collaboration with the Roosevelt‘s head mixologist T Leggett.  As far as beer styles go it is most similar to a Gruit.  We have been inspired by the surge in craft vermouths and have brought out very vermouth like flavors, aromas, and bitterness without focusing on hops. Hops dominate the brewing world at present and all the wonderful flavors and aromas of all other botanicals have been all but forgotten. Made with Petit Verdot form our Vineyard and Aged for 7 months in red Wine Barrels.

Aroma: Citrus, Floral, Pineapple, Strawberry, Rosé, Herbs De Provence, Vanilla 

Flavor: Bitters, Lemon, Citrus, Herbal, Cranberry, Sour Cherry, Thyme, Blueberry, Dandelion Greens, Blackberry

Red Rye IPA brewed with rich malts and cryo hops.
